Sauerkraut with Apples

(From A Taste of Culture: Foods of Germany, published by KidHaven Press. Save on this title all spring long!)

If you want your sauerkraut a little less sour, wash and drain it before mixing with the other ingredients

Ingredients

  • 1 large tart apple, cored and chopped
  • 1 teaspoon lemon juice
  • 1 large carrot, peeled and shredded
  • 1 teaspoon sugar
  • 1 lb. sauerkraut
  • Salt and pepper to taste

Instructions

  1. Put the chopped apple in a bowl. Sprinkle the lemon juice over that apple to keep it from turning brown.
  2. Add the carrot, sugar, sauerkraut, salt and pepper; mix well.
  3. Cover the bowl and refrigerate for at least one hour. Serve cold.

Sauerkraut is very nutritious. It is rich in vitamins A, thiamin, riboflavin and C, plus the minerals iron and potassium. It is loaded with fiber and fat-free as well. Scientists say that sauerkraut contains chemicals that may prevent cancer growth; it also contains helpful bacteria that may destroy salmonella (a harmful bacteria that cause food poisoning).
