Souvlaki

Souvlaki means “meat on a stick.” This easy-to-make recipe calls for chunks of lamb. Beef or pork can also be used.
Ingredients:
1 lb. lamb, cut into about ½-inch cubes
1 tbsp olive oil
Juice of a half lemon
Salt and pepper to taste
Instructions:
- Combine the olive oil, lemon juice, and salt and pepper.
- Marinate the meat in the olive oil mixture for one hour in the refrigerator.
- Thread the meat onto wood or metal skewers.
- Grill the meat over an outdoor or indoor grill or in a broiler until it is brown inside and out. If using an indoor grill, use wood skewers that have been soaked in water.
- Put the meat on plates and serve with taztziki.
